Click to ViewPolarimeter reading is a measure of the rotation of plane-polarized light by a sucrose solution. The specific rotation of sucrose at 20°C using yellow “sodium-D” light (589 nm) is +66.47°. The polarimeters used in sugarcane research (Saccharimeter) use the International Sugar Scale (100°S) point of the Saccharimeter i.e. the polarisation of the normal sucrose solution (26.000 g of pure sucrose dissolved to 100 mL) polarised at 20°C in a 200 mm tube, using dichromate filter. As per the International Sugar Scale, 26% sucrose solution should read 100°S. This instrument output is the pol reading. Pol reading needs to be referred to Schmitz’s Table using the polarimeter reading on the vertical side and the uncorrected Brix value on the horizontal side to obtain sucrose % (pol %) of the sample.

  Working Principles
Click to ViewPolarimeter measures the angle of rotation caused by passing polarized light through an optically active substance. Polarimeters can be calibrated – or at least verified – by measuring a quartz plate, which is constructed to always read at a certain angle of rotation. Quartz plates are preferred by many users because solid samples are much less affected by variations in temperature, and need not to be mixed on-demand like sucrose solutions. The specific rotation of sucrose at 20°C using yellow “sodium-D” light (589 nm) is +66.47°. Polarimeters used for sucrose analysis is calibrated using 26% sucrose solution. As per the International Sugar Scale, 26% sucrose solution should read 100°S.

It is used for measuring the concentration of sucrose in juices and jaggery and the purity of these products. Commercial cane sugar (CCS) per cent and CCS yield also be calculated using Brix and Pol% values of sugarcane juice. Purity: The ratio of per cent sucrose (or Pol%) to total soluble solids (or Brix %) in a sugar product. Purity per cent of more than 85 indicates the maturity of cane and its suitability for processing for jaggery making or sugar manufacture. Commercial Cane Sugar per cent (CCS %): CCS (%) = [S - 0.4 (B - S)] x 0.73 = (1.022S) – (0.292B) Where, S= Sucrose % in juice and B= Corrected Brix (%) Immediately after and before use the instrument needs to be cleaned and maintained. The sample cell assembly should be thoroughly washed till the measurement reading becomes zero to avoid clogging due to microbial growth in the sample cell.
